Purity & Superfood Raw Energy Bites

½ cup raw unpasteurized almonds
½ cup raw cashews
½ cup finely chopped dates
½ cup organic mulberries
¾ cup quinoa flakes
¾ cup Purity coconut water powder
¼ tsp ground cardamom
½ tsp ground cinnamon
Zest of one orange
½ cup dried unsweetened shredded coconut

Combine the raw almonds and cashews in a Cuisinart or standing blender and pulse until they reach nut butter consistency. Add the dates and pulse again until finely chopped and incorporated with the nuts. Add the mulberries and quinoa flakes and pulse to combine. Add the coconut water powder, cardamom, cinnamon and orange zest and pulse to incorporate.

Use clean hands to remove the mixture from the blender and form into ping-pong ball sized rounds.  Roll each ball in the shredded coconut until covered. Enjoy immediately or wrap tightly and save for up to 10 days.  Enjoy!
